Definitely sounds possible!

One thing we would need to do is work out how much power the PI and
camera draw when in use so that we can work out what kind of battery
and charging system is required. Other than that it all sounds
possible. I’m not sure how well a webcam works in low light though.
We may need to add some infra-red LEDS to the camera so that it works
better in low light. I’ve done this before with security cameras to
achieve the same thing. It all depends on the camera but it’s
definitely a good project and the sort of thing the PI would be very
good for.

Out of interest, where did you get that HDMI to VGA adaptor you were using
on your pi on wednesday?

I would be very interested in helping out with this project, I am working
on something similar for my target system. though I wondering would you not
be better with PIR sensor, then when its trigger have light come on and
webcam start filming, like phototrap. or even just as Battery saver, not
use webcam to detect motion, and use PIR less power consuming way
of detecting the movement, then have the Infra-red LED’s and Camera turn
on. from my understand you can turn any Webcam you want into Infra-red by
removing the filter and replacing it with some old photo-film.
